Lemon Sherbet Ice Cream (raw, vegan)

Quick 2-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time

To me, this is the perfect summer ice cream! 

It's light, fresh and sort of cooling - and since we are using real lemons for this, it does not taste artificial at all. It has a wonderful tart flavor from the lemon juice and just enough sweetness to not overpower it. 

My mum tasted this ice cream, and she says it's her favourite so far! (she used to love dairy-based lemon yogurt ice cream and lemon sherbet!)

*BTW: am i the only one who thinks of Harry Potter when someone mentions "sherbet"?

Ingredients

3 large ripe bananas, frozen
juice of 1/2 organic lemon
zest of around 1/4 organic (!) lemon
1 tsp agave syrup or preferred sweetener (optional)

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


Instructions

Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), add your shredded lemon zest, then the juice and your preferred sweetener (i'm using 1 tsp of agave syrup). Make sure to use organic lemon - otherwise you will take in all the pesticides and fungicides that are sprayed onto non-organic citrus fruit, and we don't want that, do we.

Blend until creamy smooth and spoon into your favourite bowl. I promise you, if you like(d) dairy-based lemon ice cream, you will love this one! It is absolutely delicious and refreshing!
