Millet Oatmeal with Caramelized Orange Ginger Compote

If this isn't the perfect little wintry weekend breakfast in bed i made my boyfriend before we went to Thailand then i don't know what is :)

For some reason orange and ginger go together really well. Almost like chocolate and orange, or chocolate and ginger. Why did i not add any chocolate to this?! Dang it!

Well, topped it with cinnamon, a caramelized orange slice and a bit of maple syrup, which was also super tasty.
TIP: For caramelizing, make sure to use brown sugar or - even better! - coconut blossom sugar, as it has a slight caramel-y taste already, has a low glycemic impact, and is just overall amazing. 


Ingredients

Oatmeal:
1/2 cup oats (gluten-free if gluten is an issue)
1/2 cup millet, ground (the grinding is optional - i used my blender for this)
1 cup water 
1 cup plant-based milk
1 ripe banana, mashed
1 tsp cinnamon, ground

Orange Ginger Compote:
1 orange, peeled and chopped
1 thumb size piece grated ginger, grated
3 tsp coconut blossom sugar (or brown sugar)

More cinnamon
Maple syrup
Caramelized orange slice

Instructions

Oatmeal: In a bowl, mash your banana and add to a small saucepan, along with your oats, millet, water, and plant-based milk. Bring to the boil, frequently stirring to prevent burning. As soon as it boils, switch off the heat and let it simmer on its own, stirring every few minutes. Add in the cinnamon for a bit of wintry flavour, and keep the lid closed as it simmers. 

In the meantime, prepare the orange ginger compote.

Compote: Heat a small skillet over a medium heat. Chop the orange and grate the ginger, add that to the skillet and let simmer in its own juice. Then add the sugar and sauté over medium heat for 2 minutes or so, constantly stirring. My orange was quite juicy, but if you feel like your compote is not moist enough, you might want to add a splash of orange juice to it as you cook. Be careful though not to use too much fluid, or else you'll have to drain off the nice and sweet juice!

For my decorative orange slice, i simply "roasted" the orange slice with a bit of coconut sugar in the skillet.

By now your oatmeal should be cooked, creamy and thick. Remove from the heat and transfer into two bowls. Top off with a heaping spoonful of orange ginger compote and sprinkle your favourite toppings over the top! For me that's more cinnamon, caramelized orange slice, maple syrup, and a cinnamon stick and star anise for garnishing

Wish í had thought of adding a piece or two of dark chocolate, but oh well! Next time. Was still super yummy!
