Cinnamon Ice Cream + apple compote (vegan)

Quick 2-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time

Cinnamon ice cream is one of my boyfriend's favourite ice cream flavours, and since it's our monthly "anniversary" (yes, we still celebrate that on a small scale!), what's more fitting than homemade cinnamon ice cream! Spiced up with a bit of Maca powder for its said aphrodisiac properties ;)

Ingredients

4 ripe bananas, frozen
around 1 - 2 tsp cinnamon, ground (make sure to use high quality Ceylon cinnamon!)

optional:
1 tsp Maca root powder
Maple syrup
Tahini
Apple compote (see below)


also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


Instructions

Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), and blend. Add cinnamon and Maca powder.

Blend, blend, blend until creamy smooth. 

Using a spatula or spoon, scrape your cinnamon ice cream into a dessert bowl, sprinkle some more cinnamon and a drizzle of maple syrup and tahini on top, and enjoy!


For the Apple Compote:

2 large apples, peeled and diced
1 tsp cinnamon
1 tbsp agave or maple syrup

Heat a small saucepan over a medium heat. Add the chopped apples to the skillet, let simmer for a minute or two. Then add agave or maple syrup and cinnamon, stir well, close the lid, and sauté over medium-low heat for 5 - 10 minutes.

Tastes great on top of porridge, nicecream, waffles and pancakes. Yum!
