Weekly Meal Plan CW 04

What's on the menu?

- We started the week with a hearty potato salad with lettuce, veggies and beans, using tomato purée as the sauce. Simple but satisfying.

- On Tuesday I tried out a new recipe: Chili Cornbread Casserole (I used plain corn flour instead of the mixture, and I added bell peppers and sweet corn to the original recipe). The baked cornbread on top turned out quite hard, almost like actual bread, but it was very tasty.

- For Wednesday my boyfriend whipped up some creamy and delicious mango coconut carrot soup. Yum! Next time we will use less mango and coconut, and more spices though because it was quite sweet! Similar recipe: over here.

- On Thursday we tried another new recipe: Baked Green Pea Fritters with baked potato wedges and a dip made with soy yogurt, lemon juice and herbs. (by the way, I used ground oats instead of the chickpea flour, and it worked like a charm)

- Friday was our "pasta day" - we made yet another new recipe (the fourth this week!). We made our very first vegan Pad Thai that turned out super delicious and spicy. We didn't have any peanut oil, so we used regular olive oil, and we reduced the sauce to maple syrup and soy sauce – super good!!

- Friday night and on Saturday we helped with a huge house moving, and our friends who moved houses brought lots of (wheat, spelt and rye) bread rolls plus loads of (vegan and non-vegan) spreads, such as two kinds of hummus, yummm. Naturally, I ate a ton of spelt and rye bread rolls with a ton of hummus each, hehe. On Sunday we didn't do much – rested our sour muscles in bed all day –, so dinner was a simple veggie stew with leftover noodles from the Pad Thai. Oh, and we made another batch of homemade popcorn! This time: salted chocolate, yum!
